This unusual green tea comes from gardens around the city of Makinohara on the Pacific coast of Shizuoka Prefecture, Japan. Growing there are tea bushes of the Yabukita variety, the most popular in Japan, with soaring branches pointing toward the sky and the sun. Freshly picked leaves are treated with hot steam to stop enzymatic oxidation. Fukamushi means that the leaves spend longer in clouds of hot steam, resulting in a sweeter and bitterness-free tea.
